Chicken & Orange Caesar-Style Salad with Grana Padano
Ingredients (Serves 4)
- 12 oz chicken breast, cleaned and cut into small cubes
- 2 oz Grana Padano, shaved or cut into small pieces
- 1 small head iceberg lettuce, chopped
- 2 oranges, peeled and segmented
- 2 tbsp pine nuts
- 1 small spring onion, thinly sliced
- 1/2 cup plain Greek yogurt
- 1 tbsp fresh chives, finely chopped
- 2 tbsp extra-virgin olive oil, plus more to finish
- 1 tsp balsamic vinegar
- 1 sage leaf
- Mixed edible flowers or fresh herbs (optional, for finishing)
Preparation
- Prepare the chicken
Clean the chicken breast, removing any excess fat.
Cut into small, even cubes.
- Cook the chicken
Heat extra-virgin olive oil in a pan over medium-high heat.
Add the chicken and sauté until well browned and fully cooked inside (not pink).
Add a sage leaf and a small drizzle of oil.
Lower the heat and let the chicken finish cooking evenly. Set aside.
- Prepare the salad base
Chop the iceberg lettuce into bite-size pieces and place it on a serving platter or in a large bowl.
- Season the salad
Drizzle the lettuce with extra-virgin olive oil and balsamic vinegar.
Add the pine nuts and let the salad rest briefly so it lightly marinates.
- Prepare the yogurt dressing
In a small bowl, mix the Greek yogurt with finely chopped chives until smooth.
- Add fruit and protein
Add the orange segments to the salad.
Scatter the warm chicken pieces over the lettuce.
- Finish with yogurt and herbs
Spoon the yogurt dressing over the salad.
Add edible flowers or fresh herbs if using.
- Add the Grana Padano
Finish with generous shavings or chunks of Grana Padano so each bite includes cheese, chicken, and salad.
- Final touch
Drizzle lightly with extra-virgin olive oil just before serving.
